Lamingtons
essential for every Australian school fete and children's birthday party

120g (4¼ oz) butter
2/3 cup sugar
2 eggs, beaten
2 cups self raising flour
1/3 cup milk
½ teaspoon vanilla essence
30g (1 oz) butter
½ cup boiling water
3 cups icing sugar
1/3 cup cocoa
1 teaspoon vanilla essence
2 cups desiccated coconut

Preheat oven to 180°C (350°F). Grease a lamington tray (31cm x 25 cm, 12.2"x 9.8").Cream butter and sugar, until light and fluffy. Gradually add the eggs and mix well. Add flour and milk alternately to the mixture, stirring gently after each addition. Add vanilla essence. Stir. Spread batter in tray and bake for 35 minutes. Turn out and cool on a wire rack.
Melt butter in ¼ cup boiling water. Sift icing sugar with cocoa. Add butter/ water mixture, mixing well. Add vanilla essence and enough of the remaining water to form a thin icing. Cut cooled cake into 30 squares, dip each square in icing, then roll in coconut and leave to dry on a wire rack.

But it appears that Fize and Uno nicked my Lamington tray when they moved out :(

My wife has a number of Aussie recipes as her mother is from Melburne. What she misses most tho is Violet Crumble :D Do you have a recipe for that? She has something close but its not quite right. My personal favorite is Pavlova. I wont go into detail as to what or where you can put that stuff you call Musk Sticks! I personally think they are a joke you Aussies have played on the rest of the world similar to Foster's beer!

musk sticks like vegimite are an aquired taste...but then I thought peanut butter and jelly was a tv joke till I got told otherwise

violet crumble is baked honey comb with chocolate covering....if she likes the crunchie better that's just spun suger made to resemble the baked honeycomb...

pavlova...good plan that's my next one hearing how everyone burn's them or can't get the egg whites stiff enough will be fun hehehehe and your right fosters is a joke on the world no one here drinks that piss

no coctails have names like screaming orgasm and sex on the beach. peanut slabs are as many peanuts as you can squish into a mold with chocolate filling the gaps and holding them together...chocolate fish must be a victorian thing cause I have NO CLUE

Forgot we were doing nummy aussie goodness.  Chocolate fish = nummy kiwi goodness, although I have seen them here.
Pink marshmallow (not too sweet) molded into the shape of a fish and then covered with chocolate.  Best eaten cold from the fridge and a little stale so its chewy.  Eating rules state you must bite thier tails off first!

Yes, thought my lady friend was crazy when she "introduced" me to musk flavored (yes, flavored NOT flavoured) Life Savers.
They really are as disgusting as they sound.  Sent some to some friends back in the USA and got a good laugh :)
